Lavender Lemonade sounds like it would be a bit fancy – and it is – and yet it’s so simple to prepare. Naturally sweetened and flavored, you’ll love sipping it for a special treat or, like us, as a new go-to beverage in the ‘fridge. Consider adding Lavender Lemonade to your next get-together as a fun alcohol-free beverage for your guests. A pale lavender drink with sprigs of lavender in a pretty glass – who could resist?

Serves: 4
Equipment Needed
  • 1 medium bowl
  • 1 spoon
  • 1 carafe or pitcher

Ingredients
  • 1 small handful fresh lavender*
  • 2 tbsp granular monk fruit sweetener
  • 2 cups boiling water
  • 1 lemon, juice
  • 2 cups cold water
  • Ice
Directions
  1. Cut the lavender flowers from the stems (no need to strip) and place them in a medium bowl. Pour the monk fruit over the flowers and use your clean fingers to gently rub the flowers into the monk fruit, creating lavender “sugar.”
  2. Pour 2 cups of boiling water over the lavender “sugar” (aka simple syrup) and stir it with a spoon until the sugar has melted. Cover and let the water and lavender “sugar” infuse for 30 minutes (or up to several hours – your choice).
  3. Strain the lavender-infused simple syrup and pour into a serving carafe or pitcher.
  4. Stir in the lemon juice. Add another two cups of water. Taste and adjust for tartness. Add more lemon juice if too sweet.  Add more monk fruit if too tart. Add ice and more water to the desired level of concentration. Note that the ice will melt eventually, further diluting the drink.
  5. Add some thinly sliced lemons and a few lavender sprigs to the serving pitcher for presentation.
Notes
  1. *You can purchase pre-dried lavender, just be sure it’s food-grade.
  2. If you’d like to enhance the color, please use a high-quality vegan food coloring.
  3. Lavender Lemonade can be prepared as a warm drink. Simply don’t add the ice and use hot or warm water if you want to add more to adjust for taste.
