Turkey Pumpkin Chili w/Avocado Recipe

Ingredients

1 tsp extra virgin olive oil
5-1/3 oz ground turkey
1/2 yellow onion (diced)
1-1/2 tsp garlic (cloves, minced)
1-1/2 tbsp chili powder
1-1/2 tsp cumin
1/2 tsp paprika
1/2 cup crushed tomatoes
1/2 cup pureed pumpkin
1/2 cup water
3/4 tsp maple syrup
1/2 tsp sea salt
2 cups coleslaw mix
1/2 avocado

  1. Heat olive oil in a large skillet over medium-high heat. Next, add the ground turkey, onion, and garlic, and saute for about 5 to 7 minutes, or until the meat is cooked through. Drain off the fat.
  2. Add the chili powder, cumin and paprika. Stir for about 1 minute, until fragrant. Add crushed tomatoes, pumpkin, water, maple syrup and salt. Let simmer about 10 minutes.
  3. Divide coleslaw into bowls, then top with chili, then with avocado.
