Sweet Potato Basil Soup in the crockpot is the perfect warm-up on a cold day. Rich and creamy, a hearty bowl of sweet potato basil soup is made with pureed sweet potato and coconut milk. Healthy? Oh, yes, it’s healthy. But it’s also the ultimate comfort soup on a chilly day.

  • Cook time: 3 hours
  • Total Time 3:05
  • Serves: 3 – 4
Ingredients
  • 2 sweet potatoes or yams, diced
  • 1/2 yellow onion, sliced
  • 1 (14oz) can of coconut milk
  • 1 cup vegetable broth
  • 2 garlic cloves, minced
  • 1 tablespoon dried basil
  • Salt and pepper to taste
Directions
  1. Place all ingredients into your crockpot.
  2. Mix ingredients together.
  3. Cook for 3 hours on high.
  4. Use a hand blender, blender, or food processor and puree the mixture until smooth. (A 9-cup food processor fits everything perfectly.)
  5. Eat up!
