Egg Roll Lettuce Wraps are simple to make and oh, so easy to eat. Who knew there could be healthy egg rolls? Our nutritionist, that’s who! This recipe’s protein is chicken or shrimp, but you can replace it with your favorite protein. There’s no frying involved, either – butter lettuce is an easy bread alternative. It holds the food nicely and tastes great, plus it works better than romaine lettuce for wrapping food. Make Egg Roll Lettuce Wraps part of a meal, side-dish, or snack!
Ingredients
- 2 tablespoons coconut oil
- 2 tablespoons sesame seed oil
- 1 large cabbage, sliced
- 1 large onion, sliced
- 1 cup chopped carrots, about 3-4 medium
- 1-inch ginger, grated
- 3 cloves garlic, grated or diced
- 1/4 cup Coconut Aminos
- 1-1/2 pounds ground chicken, shrimp, or vegan protein
- Butter Lettuce
- Sriracha
Directions
- Add the coconut and sesame seed oil to a large skillet and heat over medium heat.

- Add the ginger, garlic, cabbage, onion, and carrots and cook until tender.
- Add Coconut Aminos and cook for 5 more minutes.
- Add the chicken or shrimp cook until fully cooked through. Stir regularly to evenly distribute.
- Add mixture to butter lettuce.
- Serve and enjoy!

It has a tightly folded head that is bright green on the outside, yellow on the inside and is often sold with the roots attached to preserve freshness. The USDA indicates that butter lettuce is low in sodium, a good source of vitamin A (70 percent of your daily requirement), and has small amounts of iron and calcium.
