Ingredients
  • Olive oil (1 tbsp)
  • Garlic, minced (3 cloves)
  • Mushrooms, sliced (2 cups)
  • Kale, chopped and stems removed (4 cups)
  • Sea salt (to taste)
  • Black pepper (to taste)
  • Lemon juice (1 tbsp, optional)
Instructions
  1. First, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Next, add sliced mushrooms and cook until browned and tender, about 5–7 minutes.
  3. Then, stir in chopped kale and cook until wilted, about 2–3 minutes.
  4. After that, season with sea salt and black pepper to taste.
  5. Finally (and optional): Finish with a splash of lemon juice for brightness.
  6. Serve warm as a side or spoon over grains for a quick lunch.
