Green Chicken Sliders

Equipment Needed:

  • (1) Medium Bowl
  • (1) Large Skillet

Ingredients:

  • 8 Oz Extra Lean Ground Chicken
  • ½ Tsp Oregano, Dried
  • ⅓ Tsp Sea Salt
  • 1 Cup Kale Leaves (Very Finely Chopped)
  • 1 Cup Broccoli (Very Finely Chopped)
  • 1 ½ Tsp Avocado Oil
  • ½ Head Lettuce

Entree Directions:

Combine all ingredients except the lettuce in a bowl and mix well. Form the mixture into even sliders, about 3 inches in diameter, and set aside.

Preheat a large skillet over medium high heat. Add 1 ½ tsp avocado oil.

Once hot, add sliders.

Cook the sliders for about 8 to 10 minutes per side, or until cooked through.

Serve patties in a lettuce wrap with your toppings of choice. Enjoy!

Broccoli & Mushroom Fried Rice

Equipment Needed

  • (1) blender or food processor
  • (1) large pan

Ingredients

  • 1 Cup Broccoli
  • 1 ½ Tsps Avocado Oil
  • 1 Cup Mushrooms (Sliced)
  • ¼ Garlic Clove, Minced
  • 1 ½ Tsp Coconut Aminos
  • 2 Tbsp Almonds, Slivered
  • 1 ½ Tsps Onion Powder
  • ½ Tsp Sea Salt
  • 1 ½ Stalks Green Onion, Chopped
  • 2 Tbsp Cilantro, Chopped

Directions

Add the broccoli florets to a food processor or blender and pulse until a rice consistency forms.

Heat a large pan over medium heat and add in the avocado oil. Once the oil is warmed, add in the broccoli, mushrooms and garlic. Cook for 10 minutes.

Once the ingredients are cooked through, add in the coconut aminos, almonds, onion powder and sea salt. Cook for roughly 3 minutes, stirring often to combine the flavors. Remove from heat.

Top with green onions and cilantro. Divide between plates and enjoy!

Cauliflower Alfredo Sauce

Equipment Needed:

  • (1) Large Pot
  • (1) Medium Skillet
  • (1) Blender

Ingredients:

  • ¼ Head Cauliflower, Chopped
  • ¼ Tsp Avocado Oil
  • 1/2 Yellow Onion, Chopped
  • 1 Garlic Clove, Minced
  • 2 Tbsps Nutritional Yeast
  • ¼ Cup Organic Coconut Milk (Full Fat, From the Can)
  • Juice of ½ Lemon
  • ⅓ Tsp Sea Salt

Entree Directions:

Bring a large pot of water to a boil under a steamer basket. Place the cauliflower florets in the steamer basket and cook for 10 to 12 minutes, or until soft. Alternative is to place them with a splash of water in a microwave safe bowl and microwave for 8-10 minutes.

In a skillet over medium heat, add the avocado oil and the onion. Cook for 5 to 7 minutes, until cooked through, then lower the heat to low and add the garlic. Cook for 1 to 2 minutes more. Set aside.

In a blender, add the steamed cauliflower, onion, garlic, nutritional yeast, coconut milk, lemon juice and sea salt. Blend on high until smooth and creamy. Serve over top of your favorite pasta, veggie noodles or roasted veggies. Enjoy!
